Vadossi Chianti Riserva 2004 is a perfect table wine that is produced in the provinces of Florence, Pisa, Siena, Pistoia and Arezzo (Tuscany region). Vadossi Chianti Riserva is only bottled after March 1st of the next year of the vintage and is not sold until it ages 3 months in the bottle. The grapes, picked when fully ripped, undergo a process of maceration of the peels for about eight days. Fermentation takes place at a controlled temperature of 28 to 29�C. The wine is left to refine in the bottle in thermo-conditioned tanks. The Italian Grapes are blended to develop the special qualities that only Vadossi can accomplish in a Chianti Reserve. With a blend of Sangiovese 85%, Canaiolo 10% and Malvasia 5%, this ruby red, tending to garnet with aging wine has good consistency and an intense fragrance that is persistent with fruity notes of cherry, followed by hints of spices and of black pepper. Its taste is harmonic, dry, sapid and a little bit tannic. It becomes soft and velvety with aging. With an Alcohol content 12.5%, this Chianti Riserva should be served at 16 to 18�C. It pairs extremely well with matured cheese, red meat and steaks.
