Cabernet Franc is a deep and delighful wine. CASS Cabernet Franc 2005 is even better because the grapes are all estate grown in CASS' own vineyards and the wine is produced at their own winery. CASS Cabernet Franc 2005 is a deep, ruby/purple colored wine with subtle aromas of black fruit, herbs, minerals and hints of oak. The palate is full-bodied with firm tannins, low acidity and intense ripe fruit flavors (plum, black cherry) with hints of oak, lead and herbs on the big finish. Bigger than many Cab Francs, but still shows the typicity of the varietal CASS Cabernet Franc 2005 was harvested in this vintage at full ripeness. The longer hang time resulted in concentrated flavor and structure in the wine. The ferment was punched sown up to 4 times per day and pumped over when necessary. After 16 months aging in the French oak barrel, the wine also received half that time aging in the bottle to ensure a wine ready to be enjoyed upon release. It is ready for drinking so enjoy it while we still have it in stock.

Cass Vineyards and Winery is located in the rolling, oak-studded hills between Paso Robles and Creston on California's beautiful Central Coast. This area has quiet serenity for the visitor and a perfect growing season for wine grapes. Sited due east of the “Templeton Gap”, with the evening's cooling breezes that the west side of Paso Robles is noted for. It also rest far enough from the coast to generate the heat needed to optimally ripen the Rhone varieties grown in their vineyards. One hundred percent of the wines crafted at Cass Winery are Estate Grown. Their vineyard surrounds their Tasting Room and winery. You can literally touch, taste, see and smell the grapes from the block where they were harvested.
