California Cabernet 2004 Dovetail Ashley Vineyard Cabernet Sauvignon is a classic Cabernet with all the rich aromas and taste that you expect. Dovetail's only estate vineyard, the Ashley Vineyard, was named in memory of owner / wine maker Michael Logan's mother. He grows the fruit on this property with the same love and nurturing care she provided for him. Yields are severely limited, with over fifty percent of the crop dropped just before veraison to intensify flavors and promote fast, even color change and ripening. The California Cabernet wine was aged for 22 months in 60% new French oak barrels before finding its final home in Dovetail's signature silkscreen bottles. Dovetail finds the finest sites for grapes, and then nurture them into wines. Dovetail's belief is that balanced harmony between winegrowing and winemaking is the only path to making premium wine. Owner Michael Logan works full-time on his wine making duties. The unconventional choice to make Cabernet Sauvignon and Pinot Noir was driven by Michael's passion for those wines. The Cabernet Sauvignon wines have their roots firmly planted in Michaels longtime fascination with the wines of Bordeaux. Similarly, his love of Pinot Noir from Burgundy, California, and Oregon practically forced his hand in pursuing this fickle yet enchanting varietal. As Dovetail grows, Michael's passion for other varietals may inspire new wines that will only be grown and made with the same excitement and enthusiasm he pours into Cabernet and Pinot. To accomplish their goals, Dovetail Vineyards start by farming the vineyards as if they are growing wine instead of simply farming grapes. Every year they work closely with growers and vineyard teams, and customize growing plans to match the diversity of each vineyard site. Conditions change though, and throughout the growing season they visit the vineyards and adjust those plans as the plants, their fruit, and Mother Nature dictate. As the grapes develop, the team can often be found tasting them in the field, gaining an understanding of the wine to be, and patiently observing maturity and ripeness converge. Unlike scientific methods, their own palates verify when grape flavors are in balance and have meshed with the wine envision, and only then is it time to pick. After harvest, the wine making flows from experiences during the growing season. Each lot is assessed and handled carefully throughout the process. They minimize intervention, use native yeasts whenever possible, incorporate only the finest oak barrels, and respond to the lots’ varying needs as they grow into their representations of site, varietal, and vintage. Ultimately Dovetail wines are made to best complement the grapes they have grown with such effort, and to allow the vineyards to express their strengths and personalities in your glass.
