Cava Brut from Reyes de Aragon is a delicious sparkling wine from Spain. Cava is sparkling wine that comes from a special region of Spain. When it comes from a certain part of France it is called Champagne. So you could say that this Cava is champagne from Spain. Reyes de Aragon Cava Brut is straw yellow in colour, with steely glitters. It's not easy for boutique wine producer Reyes de Aragon of Bodegas Langa to make this great Cava. After separating grapes from the picking process, the stalks and seeds of the grapes are removed, and the grapes go to the pressing process to get the must of the grape. Once in the stainless steal vats, the must will be taken out for them to ferment apart at a temperature of 16º C, so as to obtain the base wine. A second fermentation process will turn this wine into sparkling wine. In the bottle itself, the sugar and the yeasts will be added. This is the traditional method known all over the world as “Champagnoise”, or Champagne method. The CAVA reposes in Crianza during the 35 months, for the yeasts to provide all its aromatic character to the CAVA bestowing it with a great personality. Parallel to the bottle Crianza of the sparkling wine in the underground cave for 16 months, the riddling takes place, placed in the so-called riddling rack. The cellar master gives each bottle a brief and sharp twist of 1/8, 1/6, or 1/4 of a turn, once to the left and once to the right. The aim is to loosen adhesion of the sediments to the walls of the glass until all the sediments are laid in the neck of bottles. Cava making is completely a handcrafted process. After this process the CAVA bottles can be disgorged, the mushroom cork put in, labeled and made available to be consumed.
