The attractive color of De Martino Cabernet Sauvignon 2004 Legado Reserva is deep and intense with hints of purple. On the nose there is an abundance of spices such as cloves, vanilla and cinnamon, which it derives from the oak-aging. These aromas complement the aromas of red fruits, figs and black cherries that are typically associated with this variety. In the mouth this Chile Cabernet Sauvignon has well-balanced tannins that are ideal for those who enjoy a full-bodied Cabernet Sauvignon accompanied with grilled meat. This Cabernet Sauvignon from the Maipo Valley is a blend of grapes from different types of soil, one alluvial and the other colluvial, which results in a wine that represents its origin, with aromas that recall red and black fruits, and a palate with excellent body and persistence. The soil profile is a mixture of clay, sand and gravel providing an excellent and deep root system.
The harvest was done by hand at their optimum phenolic maturity, beginning April 3 with a cold maceration for 8 days, which began the fermentation, temperature was controlled between 26 to 30 degrees C during the first two thirds, then in the last third controlled at 22 � C. After fermentation maceration was done by the 28th day, the wine was aged in French oak barrels for 12 months.
This Chile Cabernet is of very intense and deep color, with shades of ruby red, is attractive and seductive to the eye. Spices like clove, vanilla and cinnamon that are provided by the barrels, which very well complement the red fruit, figs and black cherries taste of the variety. In the mouth it has excellent tannins suitable for those who enjoy Cabernet Sauvignon with a grilled meats, lamb and duck in a spicy sauce. Drink now or within the next 5 years. Serve at 16 � C.
