Napa Valley Cabernet Eagle & Rose Cabernet Sauvignon 2005 is a one-of-a-kind Cabernet blend that comes from low-yielding vines in the best blocks of the Eagle & Rose vineyard. Eagle & Rose Cabernet Sauvignon is a truly elegant and distinct wine that is mostly Cabernet Sauvignon. It's a Napa Valley blend of Cabernet Sauvignon, Merlot and Syrah from 2005. It has the fruit and structure that highlight Pope Valley grapes as well as the power and depth of the vintage. Eagle and Rose Cabernet Sauvignon wine has a deep garnet color with a nose of deep, roasted fruits and cherries, rich oak and vanilla. The rich, viscous mouth has layers of blackberries that linger for an incredible time. The fruit fermented for twenty days, using two different yeasts to achieve the greatest color intensity and classic Cabernet characteristics. After malolactic fermentation, the wine was left sur lies for five months in French Oak barrels. The wine was than racked, aerated, and put back into barrels to rest for another 14 months before bottling. The result is a classic Cabernet with an Old World winemaking style. This wine needs a chance to open up to reveal its depth so we suggest decanting, if possible. This would pair well with any red meat dish, game, braised meats and rich cheeses. The winery was built, extensive caves dug and the first vines were planted in 1995. Admiring the eagles which soared above their wild rose-covered valley, Alumbaugh's wife, Evonne, suggested the name Eagle & Rose Estate.
