Only select Syrah Merlot grapes are chosen to create it. While in some areas of the world they are known as Shiraz, in Spain these rich grapes are known as Syrah. This wine is great for entertaining or just relaxing at home. This is a genuine compromise of the terroir, it comes from the vibrant fruit blend the skillful winemaker created. It has a short maceration period, cold fermentation to preserve the fruit flavor and only part of the wine is aged in American oak for 5 months. The result is a subtle balance between a vivid fruit, good acidity, melted tannins and hints of oak. Made with 50% Syrah and 50% Merlot, rather unusual for the region, this is what the French proudly call: "Vin de plaisir." Chapillon 2005 has a smooth and gorgeous texture. It is very light and well scented, probably due to the rather high altitude of the vineyard. The wine possess all attributes to seduce everyone. Simple, great by the glass on its own or with a nice meal. The wine appeals for a great gathering with friends at home, or at a fine restaurant as a preliminary to a memorable night to come.

Christophe Chapillon is a Frenchman and a "somewhat maverick" living in Zaragoza, Spain. He sourced some old vine Syrah and Merlot, and worked with Manuel Piquer, a renown wine-maker, to produce a wine from the parcel. The result is Chapillon 2005. An incredibly delicious wine at an incredibly low price.

"Chapillon 2005 is smooth, medium to full bodied, packed with a medley of black-fruits and a nice edge of oak. Delicious easy drinking on its own but powerful enough to handle a nice chunk of cheddar as a late night filler. Unusually for the region, the Shiraz Merlot blend does not utilize any 'native' grapes being a blend of 50% Syrah and 50% Merlot. The characteristic pepper/spice edge from the Syrah component is evident but the wine still retains plenty of Spanish character."
