After careful hand harvesting the wine is fermented in modern stainless steel fermentation vats. Maturing for 18 months in French oak barriques impart layers upon layers of complex aromas and flavors. Granchiaia Tuscany is a wine of exceptional depth and elegance with plenty of ripe black fruit, backed by subtle vanilla tones, without ever assuming an over toasted character. It is full bodied with velvety tannins and a long determined finish. This wine has the most amazing crushed black fruits that include fresh picked blackberry and cherry tones. Legend has it that wine was first made by the mysterious Etruscans on the site of Granchiaia. In the middle ages, Granchiaia served as the site of a watch tower between the warring cities of Florence and Siena. Following Florence’s final victory over Siena, Le Macie del Ponte Alla Granchiaia became an agricultural estate where wine undoubtedly was made. The name Granchiaia is derived from the word "granchio," Italian for crab, probably inspired by the fact that one could find many crabs in the River Arbia, which flows at the bottom of the hill where the winery is located. In 1995, the Le Macie del Ponte Alla Granchiaia winery was acquired by its present owners with the firm intention of breathing new life into it. The estate consists of 5 hectares (10 acres) of vineyards, divided between 60% of Cabernet Sauvignon and 40% Sangiovese. Following Italian tradition, the vineyard and wine producing process is totally organic.
